Khali Dosa with Kori Gassi by Mysore Venkatrao Prabhakar
Khali dosa is lighter and softer than the usual restaurant dosa. To make dosa more affordable to the working class, a Dosa without filling (khali Dosa) was created. The batter has more rice and poha, and less urud dal which is much more expensive. Very little or no oil is used in the preparation, another cost saving measure. It is usually served with a watery chutney.
However, this humble Dosa has now found an audience far beyond its roots because it has a beautiful fermented flavour. We had it with Kori Gassi which is a Mangalorean Chicken curry
