#blahvsfood goes to Sapa Bakery in Mysore

There are people in Bangalore who drive three hours to Mysore to eat at Sapa Bakery and it’s not really a surprise. Dina Weber’s little bakery has gone from being a cult favourite to a bonafide phenomenon, and it’s more than just exceptional bread and pastries.

It’s that energy that you get listening to the kitchen staff sing while they cook. It’s listening to the team play the music that moves them, whether it’s AR Rahman or Pink Floyd or Taylor Swift (and I love that they play albums rather than singles). It’s the sense of joy and warmth and community and love and light and air and a business that wants to grow, but that wants to be better more than bigger.

Enough has been written about the actual food. The bread is intense and uncompromising. On the day we were there, Dina refused to sell the sourdough because she wasn’t happy with the proofing. The filled doughnuts are a sensation. And everything they make shows freshness and restraint. No cloying sugar sweetness. And you can almost taste the fruit in the tarts.

What people don’t know is that the coffee is fantastic as well. Infinitely better than what we get at the fancy new coffee chains, sourced
