Has La Loca Maria won any awards at the big Indian food awards?
Because if not, someone really should be shot!
This is an exceptional restaurant. Every time I talk to a Mumbai chef I respect, they recommend it. Whether it’s Alex Sanchez or Gresham Fernandes or Prateek Sandhu, everyone loves La Loca Maria and it’s easy to see why.
This is cooking that just feels so light and packed with flavour and freshness, that it feels like simplicity itself. But the process of making it requires so much skill, technique and imagination that sometimes it takes another great chef to appreciate its brilliance.
The best selling crispy fish tacos are a prime example. Everyone loves the crunchy goodness of the fish but stop to ponder for a moment on how chef Manuel Olivera has got that crunch. It is cruncher and tastier than anything at KFC, but it’s light and there isn’t even a hint of oil, the fish inside is soft and tender and moist, almost like a steamed fish. It’s a technical marvel disguised as comfort food.
Every dish is wonderfully clean. That asparagus risotto could turn me vegetarian, but only till I bite into that pork belly and feel it melt in my mouth, all sticky and juicy and lip smackingly tasty.
As for the tiramisu, it is a marvel. The mascarpone cream comes as an espuma, presented like foamy clouds floating through sheets of coffee crisps all resting on a bed of coffee sponge and served with espresso ice cream. It is a reimagining of the tiramisu that retains all the familiar flavour but makes it lighter and playful and creates a sense of wonder in what once felt familiar. The dish is an instant classic and yet another example of the brilliant perfection of La Loca Maria.
